I will admit it, when it comes to deserts I am a sucker for chocolate, but as we were in August for the Semi Finals I thought I would have a play with a fresh clean dessert. I was out in a bar when two of my friends where having a debate on whether to have Pimms or Champagne, they compromised on this Pimms Royal - and I thought that this could be the perfect recipe for a dessert. The bubbles literally dance on your tongue, which makes it an exciting desert. Be careful thought, no alcohol is cooked off - so eating one of these does have at least two units of alcohol in it!
  1. Soak the galantine in Pimms till soft (about 2 minutes)
  2. Heat 100 ml of Pimms - don't boil
  3. Lift the galantine out and stir into the heated Pimms until dissolved.
  4. Put through a sieve.
  5. Slice the strawberries and segment the orange and finally chop the mint. Stir through into the jelly. Add a couple of pinches of sugar.
  6. Pour into individual serving pots and cool over night.

For the Cream

  1. Zest the orange (set aside)
  2. Lightly whip cream.
  3. Stir in sugar and orange zest
  • 5 x Leaf Galantine
  • 1 x 250 ml can of Pimms : Lemonade
  • 1 x 50 ml of Champagne
  • 1 x 150 ml Double Cream
  • 4 x 2 tsps Caster Sugar
  • 1 x Orange (juice and zest)
  • 3 x Strawberries
  • 1 x sprig of Mint
