I will admit it, when it comes to deserts I am a sucker for chocolate, but as we were in August for the Semi Finals I thought I would have a play with a fresh clean dessert. I was out in a bar when two of my friends where having a debate on whether to have Pimms or Champagne, they compromised on this Pimms Royal - and I thought that this could be the perfect recipe for a dessert. The bubbles literally dance on your tongue, which makes it an exciting desert. Be careful thought, no alcohol is cooked off - so eating one of these does have at least two units of alcohol in it!
- Soak the galantine in Pimms till soft (about 2 minutes)
- Heat 100 ml of Pimms - don't boil
- Lift the galantine out and stir into the heated Pimms until dissolved.
- Put through a sieve.
- Slice the strawberries and segment the orange and finally chop the mint. Stir through into the jelly. Add a couple of pinches of sugar.
- Pour into individual serving pots and cool over night.
For the Cream
- Zest the orange (set aside)
- Lightly whip cream.
- Stir in sugar and orange zest
